I recommend making a big batch- leftovers work great for breakfast, lunch, and dinner!
Ingredients:
6-8 white potatoes peeled and cubed
1/3 cup of mustard
1/3 cup of Rosemary EVOO
6 cloves of garlic mashed and chopped
1 tsp salt
4 sprigs of fresh rosemary chopped
Directions:
Preheat oven to 400F
Peel and cube potatoes and add to a parchment lined baking sheet.
Mix the 5 ingredients together, add to potatoes and evenly coat them.
Roast for 20-25 minutes or until potatoes softened.
Serve with your favorite chicken, meat, or fish recipe- or enjoy with breakfast or lunch!
